Estate Brandy Scheme

8. Pressing of grapes

 

(1)

(a) All processes in connection with the pressing and further processing of grapes in respect of which an authority was issued, to wine shall be performed in a cellar on the estate concerned.
(b) Such cellar shall not be used for any purpose other than to process grapes harvested on the estate concerned into grape juice, wine or brandy.

 

(2)

(a) A participant shall notify the Authority at least one working day beforehand of the date on which the pressing of the grapes concerned will commence.
(b) Such notice shall also specify—
(i) the reference number of the production sheet issued in respect of the grapes concerned;
(ii) the designation of the vine cultivar of the grapes concerned; and
(iii) the address of the premises at which the grapes concerned will be pressed.

 

(3) A participant shall—
(a) during the course of each working day record the applicable particulars in connection with the grapes pressed during that working day in duplicate on a press register approved by the Authority for this purpose;
(b) daily determine the total mass of the grapes of which particulars were thus recorded, and record such total on the press register concerned;
(c) record the relevant particulars on the production sheet concerned; and
(d) maintain a wine record approved by the Authority for this purpose, in respect of the must and wine obtained from the grapes concerned.

 

(4)

(a) Separate pages of a press register referred to in subsection (3)(a) shall be used to record the particulars in respect of grapes pressed by virtue of different authorities.
(b) Such press register shall be retained at the premises where the grapes concerned were pressed until the brandy produced from those grapes has been certified or sold otherwise.
(c) The Authority may demand that the original pages in such press register be furnished to it.
