Citrus fruit must be pre-cooled to a pulp temperature not exceeding 3.0°C above the prescribed carrying temperature. A pulp temperature increase (on the outside of pallets) not exceeding 5.0°C above the prescribed carrying temperature will be permitted during the handling, loading and transport of citrus fruit, and until re-cooling has recommenced.
